Gluten Free Day Four

~ Gluten Free Corn Bread, Nann and Rice ~


We had our first gluten free (GF) pizza last night at Nick's Pizza and Pub. It was so good. Really really good. Both husband A and I like it and more importantly the kids liked it. I do feel fortunate to have a pizza place in our neighborhood that has a GF pizza. The restaurant is totally kid friendly too. It is one of those place that leaves peanuts on your table and you throw the shells on the floor. Both A & G were confused by the peanut thing. They have lots of cool dead animals on the walls and it was loud. I love loud restaurants. When you eat in a loud restaurant with kids you blend in and no one gets irritated with your children, when you eat in a loud restaurant with you sweetheart it feels romantic, when you eat in a loud restaurant with a group it feels super fun and happy.

This morning we made a trip to Woodman's grocery as it had been recommended to us as a store that carries a large variety of GF items and it most certainly did. Lots of GF flours to use when baking, tons of GF pastas, crackers, cookies, brownie mixes, cookie mixes, cake mixes. They also had a large GF frozen section. We (like many families) do our fair share of take out dinners when our evenings get away from us. Our take out choices are now restricted as a GF family. Chipotle's burrito bowl still works for us. WooHoooo!!!! (digressing) We now are going to have to work harder at planning meals and making sure we have some quick frozen things we can turn to on those evenings that get away from us.

Husband A made some GF corn bread and rice this afternoon to get our week off to a good start. We also visited Aunt A's house to honor Cousin H's baptism. It was the first family party that required us to bring separate food for A. Aunt A. made pulled pork which was GF. We brought rice and bread to supplement the meal. The hard part was desert. We tried to pull off corn bread as "cake" when everyone else was eating giant slices of chocolate cake. It went fine. She did eat the corn bread cake after stating, "No, the chocolate one, the chocolate cake." I told her that it would make her feel yucky and on to the corn bread she went. I am sure as she gets older it won't be so easy. We need to find a recipe for some GF cupcakes that we can freeze and un-thaw to take to parties for her.

Hey!! thats gotta be hard! but one of my friends has a aunt that makes cookies and she has these GF cookise and my friend say taste exactly like regular cookies and are really super good and my friend is PICKYYYY on her foods! Its like called Sweet Christines or something very similar! i can find more GF stuff for you guys since my frend is BIG into cooking so she knows all the stuff that I have no idea even existed haha. Well give the twins kisses for me! I miss them! LOVEEDD the summer :)
